Collins Pub
After twenty years in the food business, Seth Howard fulfilled a dream and opened the Collins Pub on the edge of Pioneer Square.

Collins Pub is located on 2nd Avenue on the same block as the Smith Tower (between James and Yesler). Seth has cultivated his passionate dream for over a decade: to open a terrific pub with the best PNW crafted beers and local wines. He also dreamed of a pub with superb food, a place for business lunches, after work cocktails and dinner, a place to tune up before Seahawk or Mariner games, gallery walk or boutique cruising. Seth wants it to be a fun place to kick back and enjoy (music, 2 big TV's), a place he and his peers can bring their kids (until 9pm), and comfortable neighborhood joint for all to relax and unwind.

Seth wants it to be a happy place to kick back and enjoy (music, 2 big TV's), a place Seth and his peers can bring their kids (until 9pm).

"It is a crazy time to be opening a place like this in an unstable economy and the 'hip new spot' biz being so fickle" says Seth... "but I felt that was my time to make the move. My dream and plan came together when we found the Collins building space owned by Samis. One of the oldest buildings in post- Fire (1889) Seattle and was leased as an empty space... a blank palate for the design genius of the CLO Design Group. Collins Pub was crafted by DP Contractors on schedule and under budget. "Knowing that I will be spending seven days a week in there, and because almost all of my friends have kids, I included 'family friendliness' into the Pub plan. Basically, I hope to build this into a Seattle landmark not just the latest 'thing'."

Another key piece in the Collins puzzle was Seth finding and hiring chef Addam Buzzalini, a gifted twenty seven year old chef who in the last ten years worked some of the finest restaurants in Grand Rapids, Michigan. Addam and kitchen staff has the town talkin’ with arguably the best hamburger in town, world class beer-battered fish and chips and deluxe wild king salmon. The Collins Salad (exotic greens, blue cheese, and balsamic-vinegar dressing with honey glazed pecans) is bringing people back. There's also a delicious Caesar (available with chicken and prawns), a tasty Rueben, smoked salmon chowder and many more items.

Three times a week Seth and Adam walk the stalls of Pike Place Market for special "Fresh Sheet" items (this week was troll caught chinook salmon).

The Collins Pub has the best beer selection in downtown Seattle - twenty two mostly Washington microbrews, as well as a great wine list and a full bar. Each month features beer and wine tasting parties, and there will be revolving art featured on the walls. The art will rotate with openings on "first Thursday" gallery walk.

Seth is a fourth generation Seattleite who grew up in the North end and Pioneer Square. For years Seth walked the stalls in the Market every Saturday. Seth comes from a family who loves preparing and enjoying great food. Until this spring, he was directing operations for his step father's (Dany Mitchell) Mitchelli Family Restaurant Group. He is a graduate of NW School for Art Humanities and the Environment and attended the UW. He has been on the board of the Pioneer Square Community Association for three years.

"I want Collins Pub to be a place people want to return to for the excellent food and great times; a friendly and comfortable yet lively place to hang out" says Seth. Collins Pub is a work of heart and art; delicious freshly prepared lunches and dinners for locals and workers in the area; a place to meet friends before jumping into Pioneer Square or walking to sporting events at the Seahawks Stadium or Safeco Field; a hip place to bring your kids, a place to listen to great music and enjoy the collins pub scene.
